Inspired by my last entry, I tried my hand at a new recipe for spanakopita. It called for roasted pine nuts, camembert, ricotta and parmesan cheese and no egg. I added a touch of feta as well, because I like the tang of the traditional pies. Added in over the filing, I sprinkled a touch of panko to add extra crunch. Yum!
